I haven't been here long but my god vanished before I ever got to meet him which makes me wonder: what the hell is a shinki good for? What are we supposed to do? Is there any point in serving a god if they can just vanish?

There most certainly is a point. We possess the power, when partnered with a god, to destroy ayakashi and thus, as trite as it sounds, save lives.
It's unfortunate that your first god vanished so soon, but that does not mean your next one will.

Shinki are just what the name says: we're a god's divine instrument. Other people have given good answers to your question, so I won't bother repeating them.
But for the record, you won't be able to draw a borderline or do any other abilities without a god-given name.
Basically now you're a spirit, and those tend to end up as ayakashi food.
You might want to reconsider teaming up with a god.
