Toko Ginjo's umeshuu is reliable. Koshigoi has one made with junmai-grade sake that's very traditional and pleasant. Nakata Umeshuu Taru is another of the better ones I've tried recently. A little smokier-tasting, it's aged more like whiskey. Choya's got a variety of options -- they're more run of the mill than the other brands I've mentioned, but widely available and mostly acceptable. Tried one they made with French brandy, and I liked it, but you might like the more common ones more if you're the sort for sweets.

I've heard some people water the whiskey down, but I'm not certain I'd do it myself. Just know your limits and be sensible.

I see. In that case, I might pass on the advice.

As for getting bartenders' attention, it's easier if the bar is empty. Quiet places that don't get many customers work, or if you go in towards the beginning or end of their opening hours, it's usually easier to make yourself seen.

If you can manage to find a natural excuse to touch them, that usually helps, too.
