Say you didn't know how to cook. So you go into a chef's kitchen and you touch everything. Say you touch the knife. You then learn all the types of knife techniques for food that the chef has used: such as the julienne, brunoise, and batonnet.

Now you know the proper technique, and can even feel the muscle memory of how he does it. But you still have to practice. You wouldn't be able to do the dice technique one-hundred percent correct until you've at least held the knife and tried it yourself.

So it's more like... you read a textbook but you have yet to take the test. Something might be worded differently and throw you off, but you know the basic answers.
