I want to ask for your recipes and advice on cooking a goose. I'm used to Japanese cooking and I don't think I ever prepare one before. But I don't mind learning.

Well, you'll need a charcoal fire and spit. Pluck and gut the goose, then loosen the skin and rub a mixture of soybean paste, oyster sauce, sugar, salt and five-spice under the skin. Poach it in boiling water until it's cooked, then baste the outside with a vinegar and honey mixture, and cook it on a spit over the fire until the color is good and it's cooked through.

There is some technique to it... would you like a hand?
